I first tasted Armenian eggplants 2 years ago and fell in love with this dish. As soon as the first eggplants appear, this salad is among the first to be prepared. It goes well with any dishes, it is generally an irreplaceable snack for barbecue! Cooking eggplants in Armenian won't take long, but I'm sure it will become one of your favorites!
Prepare the necessary products for preparing the salad.
Cut off the tails of eggplants, peel the skin and cut into washers 5-6 mm thick. Sprinkle the eggplant with salt and leave for 30 minutes.
Cut the onions into quarters.
Blot the eggplants with napkins. Heat the sunflower oil in a frying pan and fry the eggplant until golden brown. Add the onion to the last batch of eggplant and fry it until transparent.
Put the fried eggplants and onions in a salad bowl, add chopped bell peppers and tomato slices into strips. Pour lemon juice over salad, season with salt and pepper, mix well.
Place Armenian-style eggplants in a suitable salad bowl, sprinkle with herbs and serve immediately.
