A delicious and satisfying recipe for a festive salad with fried mushrooms and chicken.
Champignons - 200 g
Chicken breasts - 0.5 kg.
Bulb onions - 1-2 pcs.
Carrots - 1 pc.
Chicken eggs - 4 pcs.
Parmesan cheese - 100 g
Mayonnaise - 100 ml.

Almost no holiday in our house can do without this magnificent salad: New Year, birthday, March 8 and even February 23 - it will always be an excellent addition to main dishes. A salad with champignons, chicken and carrots is prepared in layers, after which it is put into the refrigerator for at least 2 hours, where it is completely soaked.
So let's get started.
Pour in a small scoop of water. Wash skinless chicken breasts and put in a ladle, salt and put on fire. When the water starts to boil, remove the foam and cook until tender, about 20-25 minutes.
Boil eggs hard-boiled (bring to a boil and cook for another 10-15 minutes).
Cut the boiled chicken fillet into small cubes.
Chop the eggs finely.
Wash carrots, peel and grate on a medium grater.
Peel the champignons and cut into small thin slices.
Finely chop one or two onions, depending on the size. We will use onions in frying, half with carrots, half with mushrooms.
Grate cheese on a fine grater. I used Parmesan, but in principle any other will do.
Fry the carrots with onions in vegetable oil for about 5-7 minutes, until they become more or less soft. Add a pinch of salt while frying.
Then, using the same principle, fry the mushrooms and onions.
Now you can start laying out the layers of salad, the first will go mushrooms fried with onions. We will coat each layer with mayonnaise somewhere more, somewhere less, less in this layer, since it itself is quite juicy.
The second layer we have is carrots. Lay out and flatten it. On top of the layers, make 8-10 drops of mayonnaise and spread with the back of a tablespoon. You will need a little more mayonnaise for carrots than for mushrooms, but in general, its amount remains on your conscience:)
The next layer is chicken, which must also be laid out in an even layer and greased with mayonnaise. Here, perhaps, should be the thickest layer of mayonnaise.
On top of the chicken, evenly add finely chopped chicken eggs and grease with a small amount of mayonnaise.
At the very end, sprinkle the salad with finely grated cheese. Salad with fried mushrooms and chicken, ready. In order for all layers to be thoroughly soaked, it should be put in the refrigerator for at least 2 hours and only then served.
