"Pechenkin" salad of carrots, eggs and onions with pickled cucumbers, seasoned with mayonnaise is a hearty treat for any occasion!
Ingredients
Pork liver - 300 g
Carrots - 1 pc.
Chicken eggs - 3 pcs.
Pickled cucumbers - 3 pcs.
Onions - 1 pc.
Mayonnaise - 300 g
Dill - 0.3 bunch
Vegetable oil - 30 ml
Salt to taste

I don't really like pork liver, but the Pechenkin salad is an exception, and a complete one! It comes out so tasty that it is difficult to come off, its components are so "friendly" that it is difficult to imagine a more delicious salad with liver than this one:) laid out in layers. Therefore, it will take a little time to soak, but then you will definitely surprise your guests with a delicious salad;)
Prepare pork liver, carrots, chicken eggs, pickles, onions, mayonnaise, dill or parsley, vegetable oil, salt and water to boil the food.
So, boil the pork liver: add salt to the boiled water and lower the pieces of liver, which you pre-cut and soak for 10 minutes; after the water boils again, remove the foam and cook the liver for 40 minutes. Leave the boiled liver to cool completely. Wasting no time, boil hard-boiled eggs and carrots, which then cool too. Grate the liver on a coarse grater.
Peel the carrots and eggs. Cut the pickled cucumbers into small cubes. Put the grated liver on a plate, pour with mayonnaise, sprinkle with a pinch of salt. Coarsely chop the onion and fry until golden brown in vegetable oil, and then put it on a layer of liver with mayonnaise, already cooled down.
After the onion, lay out a layer of cucumbers, drizzle with mayonnaise. Grate the carrots and egg whites (fine and coarse grater, respectively).
Put carrots, egg whites, mayonnaise on a layer of cucumbers. Grate the yolks on a fine grater. Chop the dill finely.
Put the egg yolks in the last layer, cover the sides of the salad with dill, decorate the Pechenkin salad to your liking.
Let the salad soak in the refrigerator for a couple of hours and then serve:)
