Vinaigrette is a delicious, healthy and easy-to-prepare vegetable salad that can also be served on a festive table. There are many ways to prepare it with peas, sauerkraut, or even herring. Today we will look at one of the traditional ways of cooking it in Russian.
First you need to boil potatoes, carrots and beets in uniforms (peel). Pour a pot of water, put vegetables in there and put on fire. We will cook them until they are soft enough, you can check with a knife.
Peel and dice the potatoes.
Peel and chop the carrots as in the photo.
Peel and dice the beets.
Chop the pickles finely.
Chop the dill and onion.
Chop the green onion finely.
Chop the onions finely.
In a saucepan, combine all the ingredients, add the green peas and season with salt.
Our vinaigrette with peas is ready. It can be served as an independent dish or as a side dish. To taste, you can fill it with mayonnaise or aromatic vegetable oil.

PS: the shelf life of such a vinaigrette is not so long, try to eat it in 2-3 days. For a longer shelf life, add pickles just before serving.
