Georgians are adherents of a healthy lifestyle, so you will not find a single salad with mayonnaise in Georgian cuisine. Vegetable oil, vinegar, kefir or sour cream are used as a salad dressing, and salads are prepared from fresh fruits, vegetables, legumes, herbs, nuts and spices.
Tbilisi salad is a bright, tasty and satisfying representative of Georgian cuisine, which includes vegetables, beans, beef and a large amount of herbs and spices. I propose to experiment a bit, replacing beef with a beef heart, and prepare a salad no less delicious than in the original recipe.
Salting the salad is not necessary - vinegar and spices will completely replace salt. And if you add chopped walnut kernels to the salad, then the salad will turn out to be even more satisfying.
Prepare the food you need. Rinse the pepper and cilantro under cold water.
Cut the chilled boiled beef heart into strips.
Drain the canned red beans in their own juice and rinse the beans under cold water. Throw in a colander. Canned beans can be replaced with red cooked beans.
Remove the stalk and seeds from the pepper, cut the pepper into thin strips. Chop the cilantro finely. Peel the onion and cut into thin half rings.
Combine beef heart, vegetables, beans and herbs in a bowl. Add garlic passed through a press, suneli hops and black pepper.
Season the salad with vegetable oil and wine vinegar, stir and let it brew in the refrigerator for about half an hour.
