Step by step recipe with photo
I tried the "Roman Hunt" salad in the "Shokoladnitsa" coffee shop chain, their variation consists of roast beef, romano salad, pickled mushrooms, pistachio sauce, cranberry sauce with whole berries, croutons and cheese chips.
For the home version, I suggest using almost any ready-made meat: beef, veal, turkey, game, in the form of boiled pork, roast beef, pastroma, or just boiled, baked, etc. Meat recipes can be found on the site, the choice is sufficient.
For my taste, it is better to cook cranberry sauce without whole berries, they distract with their acid, so I puree. Pistachio sauce in its simplest version can be from chopped pistachios, even salted ones, mixed with light balsamic cream and olive oil. I advise champignons not pickled, but fresh fried. The most delicious cheese chips are obtained from hard parmesan, cheddar, goat cheese, but they are not bad either from budget semi-hard gouda, etc. Lettuce salads can be different, including assorted, but preferably juicy and crunchy, like romaine / romano, iceberg, etc.
Prepare the ingredients:
For cheese chips, grate the cheese and spread it in a thin layer on a Teflon, silicone or baking paper lined baking sheet.
Place the baking sheet in a preheated oven and bake at 150-180 degrees until melted and browned.
Then break the cooled mass into pieces.
For pistachio sauce, punch pistachios with balsamic cream and olive oil in a blender, add mustard, lemon juice, and salt if desired.
There is a good berry sauce on the site or prepare a simple version. Puree the cranberries, add salt and sugar to taste, mix with cornstarch and heat either on the stove or in the microwave until thickened. In the microwave, it is better to do this cyclically, i.e. turn on at MAX for 30 seconds 2-3 times and mix each time.
Cut the champignons not finely and fry in olive oil, salt to taste.
Immediately after the champignons, fry the cubes of white bread (loaf, baguette or ciabatta) on the remaining butter with the addition of chopped garlic and aromatic herbs to taste. Thyme is added here.
Place a portion of hand-torn lettuce on a flat dish, top with slices of meat.
Then - cooled champignons.
Collect the ingredients with a slide, drip pistachio and cranberry sauces on it.
It remains to arrange with cheese chips, throw in a handful of crackers and a salad with meat "Roman Hunt" is ready to serve.
The "Roman Hunt" meat salad is ready.
Enjoy your meal!
