A spicy zucchini appetizer is a simple recipe for a quick and tasty cold dish, in which all the beneficial properties of vegetables and herbs are preserved. Such an appetizer is ready in 3-4 hours. Store in the refrigerator for no more than three days.
Prepare the food you need.
Wash the zucchini, dry it, cut off the skin and use a vegetable peeler to cut lengthwise into thin strips. Season with salt and let sit for 30 minutes for the zucchini to juice.
Wash and dry the greens. Peel the garlic. Chop the herbs and garlic finely.
Combine vegetable oil, honey, wine vinegar, salt and black pepper in a bowl. Mix thoroughly.
Squeeze the zucchini slightly and drain off the juice.
Add garlic and herbs to the zucchini.
Pour in the marinade and stir gently.
Transfer to an enamel or ceramic bowl and refrigerate for 3-4 hours.
