A delicious festive New Year's salad can be prepared according to this recipe and decorated with a figurine of the owner of the coming year - the Cockerel!
For the salad:
Beef liver (chicken) - 300 g
Rice - 50 g
Carrots - 100 g
Onions - 100 g
Chicken eggs - 2 pcs.
Dill - bunch
Vegetable oil - 2 tsp
Salt to taste
Mayonnaise - 4 tablespoons
Chicken eggs - 2 pcs. (the number of eggs depends on the number of servings)
Bulgarian pepper - 1 pc.
Parsley - 10 g

Many years ago I ate this salad in a provincial town at a wedding, I liked the salad so much that since then I have it among my New Year's salads. The salad is light, tasty, tender, quite satisfying, from the available products. I usually decorate this salad in the New Year's theme, since the layers hold their shape well, and in the cut, the salad looks quite interesting.
So, let's prepare the products according to the list and prepare the Cockerel liver salad. Beef or chicken liver is suitable for this dish. I will use beef. You can also use a mixture of dark rice and white rice for beauty. It is better to take mayonnaise with salad. You can dilute mayonnaise with thick sour cream or unsweetened yogurt for a more dietary version of the salad.
Boil the liver in boiling salted water until soft, about 20-25 minutes. Drain the water from the liver, let it cool slightly and rub it on a fine grater. We also boil the eggs hard-boiled, cool, peel them. We lay two eggs for decoration, rub the rest on a grater.
Chop the onion finely and fry it in vegetable oil (1 tsp) until golden brown. Three carrots on a fine grater and also fry until soft for 1 tsp. vegetable oil.
IMPORTANT: You can fry the carrots and onions together and make one layer of salad from them, not two.
Cut the dill very finely. Wash the parsley and disassemble it into leaves, removing the twigs and stems.
Boil the rice according to the instructions on the package in salted water, drain the water from it and cool.
Now that we have prepared all the ingredients of the salad, we can collect the salad.
IMPORTANT: You can make the salad in portions, you can make it on one large plate.
I will make liver salad in portions. I have such metal cuttings, it is very convenient to cook puff salads in them.
IMPORTANT: You can lubricate all layers with mayonnaise, you can use one, if you wish. And yet, I did not salt the salad, since the rice and liver were salted in the process of preparation and the mayonnaise, usually also salty.
1st layer (bottom): liver + mayonnaise.
2nd layer: carrots.
3rd layer: rice + mayonnaise.
4th layer: egg + mayonnaise.
5th layer: onions.
6th layer: dill greens.
7th layer: since we are preparing New Year's salad for the Year of the Rooster, I sprinkled the top of the salad with rice (grains so that the cockerel had something to peck) and added a little grated egg on top.
Remove the ring or cut and decorate the salad with a cockerel figurine. We cook the cockerel from the egg. Eyes - from black rice, scallop, beak and tail - from bell pepper. Decorate the dish with parsley leaves and rice.
Let the ready-made liver salad "Petushok" steep in the refrigerator for a couple of hours before serving.
