Fattoush Salad is a colorful, healthy and delicious Lebanese vegetable salad made from cucumbers, tomatoes, fresh herbs and slices of toasted bread.

The colorful Fattoush salad is one of the most popular salads in Lebanese cuisine. In the homeland of the dish, this light, healthy, vitamin salad is an indispensable attribute of the everyday menu.
It is customary to prepare a salad from the ingredients that are in the house. Therefore, there are many cooking options (with minor differences), but the basic concept is unbreakable and extremely simple: as many seasonal vegetables as possible, even more varied greens, a little spicy dressing based on lemon juice and olive oil, and certainly crispy pieces of fried stale pita or pita bread, which at first crunch appetizingly and give the salad texture, and then gradually soak in a delicious mixture of vegetable juice and spicy dressing.
It is extremely simple both in composition and in preparation, but it turns out very juicy, healthy and tasty. This salad is great both as a side dish and as an easy alternative to a late dinner. Try it!
You will need these ingredients for cooking.
Prepare a salad dressing. Sprinkle a finely chopped clove of garlic with a generous pinch of salt and rub with a pestle or any other handy object until the garlic releases its juice and reveals its flavor.
Add olive oil, lemon juice, vinegar and sumac. Mix everything thoroughly, try the dressing and add more salt if necessary to your liking. Let the dressing sit while you cook the rest of the ingredients.
Brush the surface of a flatbread (pita) or pita with olive oil and cut it into small pieces. Bread for making salad is traditionally used stale or slightly dried up, yesterday's.
Place the slices of bread on a baking sheet lined with baking paper and place in an oven preheated to 175 degrees. Bake the bread slices, stirring occasionally, for 10-12 minutes, until they are crispy and golden brown.
For serving in a narrow family circle, the process is even more simplified - the cake is baked whole, and then simply broken into pieces of arbitrary shape and size. Alternatively, you can do more traditionally - frying the bread in a pan in a large amount of hot oil.
Chop vegetables for salad. Cucumbers and tomatoes - in large pieces. Onions - in thin half rings. Radish is also large - 4 or 8 pieces, depending on the size. From cucumbers, for a more interesting appearance of the salad, you can pre-cut several strips of the peel.
Radishes, like pomegranate seeds, are seasonal ingredients in lettuce. Added when the cooking time coincides with their ripening period or availability in the region.
Tear the lettuce leaves with your hands. Chop green onions, mint leaves and parsley finely.
Combine prepared vegetables and herbs. Pour in the dressing and mix everything thoroughly.
Try the salad and add more sumac or salt to taste if necessary. Season the salad to taste with pomegranate juice concentrate, if desired.
Finally, just before serving, stir in the toasted bread slices into the salad. This will keep the bread crispy longer.
Toasted pita chunks, since they are thicker than pita bread, can be added to the salad along with the dressing. In this case, you can mix the pieces of pita with the dressing in a separate container so that they absorb its taste, and only then add the mixture of dressing and bread to the salad.
