The "Confetti" salad tastes like the "Herring under a fur coat" salad, but in appearance it is much brighter, more solemn and original. Without a doubt, it will be a great option for the New Year's table! In order for the slide of delicious salad to sparkle with colors and turn into a "Confetti" salad, I used the technique of coloring mayonnaise with vegetable juices, and also used peas - it turned out great, I will definitely prepare this salad in the future!

To prepare Confetti salad, prepare beets, potatoes, onions, salted herring, crab sticks, eggs, carrots, mayonnaise, canned peas, salt, and ground pepper.

Boil beets in advance (do not add salt water), potatoes, eggs, carrots. Allow food to cool and peel vegetables and eggs. Combine potatoes (small cubes), onions (small cubes), beets (coarse grater).

Then add carrots, crab sticks (7 pcs.), Eggs (all cut into medium-sized cubes) to a salad bowl.

Fillet the herring, remove all bones, skin and cut into fillets (medium cubes). Add the herring to the salad bowl. Season the salad with mayonnaise, salt (if the herring is not very salty) and pepper to taste. Stir the salad and refrigerate for 30 minutes, let it infuse before serving.

Garnish the salad before serving. For decoration, squeeze a spoonful of mayonnaise into small bowls. Tint mayonnaise in one bowl with carrot juice, and mayonnaise in the second bowl with boiled beetroot. Chop one crab stick, also for decoration we need a spoonful of peas.

Stir the pink and orange mayonnaise separately, and remove the salad from the refrigerator.

Put the salad on a plate in a slide, pour with thin streams of tinted mayonnaise, sprinkle with chopped crab stick and garnish with peas.
