The "Vegetable Kaleidoscope" salad consists purely of fresh vegetables and will become an irreplaceable attribute on the festive table in the coming Year of the Goat. For this salad, you can choose vegetables to your liking, which will go well with each other. For salad dressing, you can take both mayonnaise and thick sour cream. Sour cream is very popular in my family.
We need the following vegetables: white cabbage, cucumber, tomato, carrot, two-color bell pepper, green onions, lettuce, dill and parsley. For dressing, take sour cream, pepper and salt.
Chop finely white cabbage, grind it a little with salt, so that it becomes softer. At the moment, white cabbage can be replaced with Peking cabbage at your request.
Grate the carrots on a Korean grater.
Cut fresh cucumber into strips.
Also cut the tomato into strips.
Then the bell pepper. You can take multi-colored pepper.
Chop the dill and parsley.
Chop the green onion thinly.
Prepare a large dish for the salad. Arrange the vegetables in piles in the order you like.
Make a ring of greens in the center of the salad. Salt the vegetables a little.
Pour sour cream inside the ring, sprinkle with salt and pepper. Serve on the festive table. Mix the salad just before use.
