An easy-to-prepare, bright and healthy salad made from a mix of lettuce leaves, boiled beets and feta will be a good addition to meat dishes, and for those who follow the figure - a good alternative to dinner. Boil the beets beforehand and refrigerate. You can use any salad leaves you like. I used arugula, spinach and chard.
Prepare the ingredients for the salad.
Peel the chilled boiled beets and cut into cubes.
Rinse fresh leaves of arugula, spinach and chard under cold water and dry. Place on a flat dish.
Place the slices of beets on top. Drizzle the lemon juice and olive oil over the salad.
Cut the feta into small cubes.
Put the feta on top of the salad. Sprinkle the salad with freshly ground black pepper.
Decorate with arugula leaves and serve. A healthy and tasty salad is ready!
