For cooking, you will need the ingredients listed.
Peel the grapefruit by cutting the skin with a knife and exposing the flesh.
Then, using a sharp knife, cut out the pulp of the grapefruit wedges, separating them from the dividing walls. Save the released juice - it will be needed to prepare the dressing.
Chop green onions finely. Fry the walnuts in a dry skillet until aroma appears, then chop them with a knife until they become coarse. Some of the nuts can be kept whole and used to garnish a salad.
Combine honey, mustard, wine vinegar and olive oil to make the dressing. Mix everything thoroughly until the honey dissolves and a homogeneous emulsion is obtained. Then try the dressing and add 1-3 tablespoons to taste. grapefruit juice or a little more honey or mustard to your liking.
Wash, dry and tear the spinach leaves into small pieces. Place the spinach in a bowl, add 2/3 nuts, green onions and grapefruit wedges.
Pour in the prepared dressing and mix everything gently.
Place the salad on a plate, garnish with the remaining nuts and serve.
