When I say "Asian salad" I always think of something vegetable, crispy, extremely juicy. Chinese salad "iiang ban huang gua" is just one of this series - spicy, refreshing and very light. Preparing a salad is as easy as shelling pears, it is suitable for any Chinese-style feast and is intended not only to whet the appetite, but also to cleanse the taste buds between meals. "Iiang ban huang gua" goes especially well with Peking duck and Chinese thin pancakes.
For the spicy cucumber salad "iiang ban huang gua", prepare the foods listed. Ideally, you need a Chinese cucumber - long-fruited, with small pimples, but if this is not the case, a regular salad will do just fine.
Finely chop the carrots with a sharp knife.
First cut the cucumber into thin slices, then diagonally into small pieces. Do not remove the seeds under any circumstances, the Chinese prefer to leave them, because cucumber salad should be juicy.
Chop the chili pepper into thin strips. The seeds can be removed or, on the contrary, left if you like more spicy dishes.
Combine vegetables in a bowl, add chopped garlic.
