In late winter - early spring, I am especially attracted to vitamins. One of the simplest and most delicious winter vitamin bombs I know of is a raw beetroot salad with garlic (note that it also includes a flu prevention agent!). This combination is perfected by a loading dose of cilantro, which is to beets with garlic - well, what the doctor ordered!
Cooking Speed - If you have a Korean carrot grater, you can do it in 5 minutes.
Raw food salad. It has a different taste and texture than the more familiar salad of boiled beetroot with garlic. Raw beets are, of course, firmer and slightly crispy. In my opinion, it tastes less sweet than boiled. But all vitamins are preserved to the maximum. Those who have tried juices from raw beets, but have not yet tried salads from them, knows that, unlike boiled beets, raw beets are slightly bitter. And not everyone likes it. So, in this salad, that bitterness is completely concealed by garlic and cilantro, you will not even feel it.
Cooking is simply elementary: peel the beets and grate them three for Korean carrots or on a coarse grater.

You can eat raw beetroot salad with garlic right away, although you can also let the salad marinate.
Freshly grated beets are firmer, those that have been lying longer are softer, but they will be better salted.
