I suggest diversifying the home menu and preparing a refreshing beetroot salad with radish and cucumber. In the spring season, our body needs vitamins more than ever, and this salad will be a great alternative to the popular spring salads. I also added Adyghe cheese to the salad, it goes very well with the rest of the ingredients.
Prepare all the necessary products for the salad according to the list.
Beets should be boiled beforehand. Finished beets must be peeled and diced. Add sunflower oil to the beets, mix.
Cut the cucumber and radish into strips.
Chop green onions and spinach.
Cut the Adyghe cheese into cubes. If desired, you can use feta or feta cheese instead.
Add radish, cucumber, cheese and herbs to the salad bowl to the beets. Season with salt and pepper.
If there is not enough sunflower oil, you can add a couple more spoons. Serve the salad immediately to the table.
