One of the variations of the popular salad, which is suitable both for a festive table and for an ordinary family meal.
Oyster mushrooms - 120 g
Potatoes - 1-2 pcs.
Chicken eggs - 2 pcs.
Quail eggs - 3-4 pcs.
Bulb onions - 1 pc.
Mayonnaise - 3 tablespoons
Chicken meat - 200 g
Frying oil - 2 tablespoons
Fresh greens - 5-6 branches
Salt - 1/5 tsp

Salad "Capercaillie's Nest" with mushrooms will certainly please with its original appearance and excellent taste, because the ingredients that are included in its composition are ideally combined with each other. I usually use store mayonnaise, but if homemade is available, I use it with pleasure. Such a salad will perfectly fit into the composition of the festive table.
Prepare all the food you need. Chicken and eggs can be boiled in salted water beforehand, but in different saucepans.
I always use fresh mushrooms. I can't say if it will turn out delicious with frozen ones - I haven't tried it. But, perhaps, the taste of the salad will not suffer from this. Wash the oyster mushrooms thoroughly, remove any excess and cut the mushrooms into small pieces.
Cut the peeled onion even smaller. Heat oil in a frying pan and add mushrooms and onions to it. Stir. The fire should be small. Salt with a pinch of salt and add a little spice. Fry for 7-10 minutes, stirring occasionally, then transfer to a plate and let cool.
Cut the boiled chicken fillet into small cubes. You can also use any other part of the chicken that is more fatty - for example, the thigh or drumstick.
Put fried oyster mushrooms with onions on a dish, give a round neat shape. Optionally, lightly grease with mayonnaise.
Place the chicken pieces on top of the mushroom layer. Here you need to make a mayonnaise mesh and carefully distribute it with a tablespoon.
Grate boiled chicken eggs on a fine grater and place on top of a layer of chicken meat. Brush with mayonnaise.
Grate the peeled fresh potatoes on a special Korean-style carrot grater. If there is no such grater, you can simply cut the potatoes into thin long strips. Fry it in vegetable oil until golden brown, stirring continuously.
Wash and dry fresh herbs, then chop finely.
Put the fried potato strips on top of a layer of chicken eggs, leaving a depression in the center. Transfer the chopped greens there. You will get an impromptu "nest".
Put peeled quail eggs inside the "nest", sprinkle with black pepper before serving.
