Now there are more and more recipes for various salads and appetizers. But the classics remain classics. "Olivier" was cooked a few decades ago and will continue to be cooked, because this tradition already lies at the genetic level. God forbid, the right sausage and mayonnaise will be invented in the near future, so that the famous salad will also become useful. In the meantime, we are preparing from what we have in stores, and we try not to put too much pressure on the classic "Olivier" with sausage on holidays and even more so on weekdays.
Today we have a classic with boiled sausage. One of the most familiar and frequently cooked recipes. Many people know it by heart and can describe the cooking process even if woken up at night. The recipe is simple: we boil potatoes, carrots, eggs in advance, preferably cool, peel. Everything else needs to be kept close at hand so that the preparation of the salad goes quickly and without hindrances. Peel the onions in advance, open the peas, remove the cucumbers from the far cabinet, check for mayonnaise in the refrigerator. Then your meal will be ready in minutes.
Cut the potatoes into small cubes. Chilled potatoes are easier to cut.
We cut the carrots a little smaller.

We also chop the onion. We transfer it to a sieve and pour over boiling water.
Cut the sausage into beautiful even cubes, since it is the main ingredient in the dish.
We transfer all prepared ingredients to a convenient bowl.
Stir and toss in the peas. We put it at the end to adjust the amount by eye.
Stir and transfer to a plate as much as we are going to serve to the table. Season the salad with mayonnaise, salt as needed and pepper to taste.

Important additions to the recipe
Instead of mayonnaise in serving salad, you can use sour cream, a mixture of sour cream and mayonnaise, or homemade sauce.
- I do not recommend seasoning the whole salad at once, it is better to do this just before serving. This will keep the dish fresh longer.
- A good addition to the appetizer is a green dressing. If you have fresh dill or green onions, be sure to use them in your cooking.
