Feta or feta cheese from different manufacturers can be of different consistency. It happens that it is wonderfully cut into cubes, and it happens that it just crumbles, which is practically not important for such a salad with eggplant.
I have this version with fresh arugula leaves, and it is very in topic here, but use any fresh herbs, lettuce and salad herbs to your liking or from available ones.
Ordinary onions are suitable for salad, and even better - sweet, purple.
Fry eggplants for salad in a pan, for example, after removing the bitterness and dusting them with starch, as shown in this recipe.
Then cut the fried eggplant slices into strips. Both warm and cold are suitable.
The onion for the salad must be finely chopped and squeezed. If the onion is decently bitter, then it is advisable to either scald it or marinate it for 10-15 minutes, sprinkle with salt and sugar and sprinkle with fruit vinegar.
The walnut kernels must be chopped.
Combine all prepared ingredients (eggplant, onion, nuts) with arugula (or other herbs), season with a little vegetable oil and stir.
When serving, add chopped or crumbled feta cheese.
