The best salad in winter is a vinaigrette with sauerkraut. No mayonnaise. All vegetables are grown in the region of residence. Vinaigrette can be served as a salad, as a side dish or as an independent dish. It is filled with vegetable oil, preferably sunflower oil. If desired, you can mix a little mustard into the oil. But this is not for everybody. Previously, I always added only peas to the vinaigrette, but there were also corn lovers, and somehow the recipe took root, became like a native.

So, to make a vinaigrette with sauerkraut, we need beets, carrots, potatoes, pickled cucumbers, onions, sauerkraut, vegetable oil, salt and pepper to taste, peas and canned corn.

Wash the vegetables and cook. Given the different cooking times for vegetables, carrots will be ready first, then potatoes. Beets will cook the longest. We take out the finished vegetables as they are cooked.

Let's clean the onion. Peel the beets, carrots and potatoes.

Let's cut everything into cubes of the same size. You can do it by hand too, I use a dicing combine.

Squeeze the cabbage and put in a bowl.

Drain the peas and corn through a sieve. Allow all liquid to drain.

Combine cabbage and chopped vegetables in a bowl, add peas with corn and mix. Season the vinaigrette with sunflower oil.

Using a serving ring, place the sauerkraut vinaigrette on a plate.

Remove the ring and serve.
