Pumpkin salad with honey is one of my favorite quick salads, especially since if I have a pumpkin, then everything else for him is definitely in the house. Because nothing is needed in this salad: pumpkin (butternut is best for such cutting, it is a constriction, it is a matryoshka), honey, vegetable oil and, if desired, flaxseed or nuts.
Pumpkin butternut is best because it has a large chunk of pulp that is easy to grate on a fine grater and produces long chunks that look nice in salad. The pumpkin must be peeled from the tough skin, and then grated (ideally, on a grater for Korean carrots).
