In our family, beans are respected, they mainly take part in the preparation of borscht, or as part of any salads. But not so long ago I wanted something spicy and useful. Why not cook your favorite beans in such a way as to kill two birds with one stone? I bring to your attention a very simple but delicious appetizer of beans with vegetables and spices.
First, let's prepare the right ingredients for the bean and carrot salad so that we don't forget anything in the process. These are vegetables:
And spices, oil, vinegar, soy sauce, spices, salt and sugar.
The beans need to be washed pretty, several times. Then sort out spoiled beans, and other debris. After that, we fill the beans with clean cool water, and forget about them for 30-40 minutes. After that, we cook in salted water for 40-50 minutes, we carefully monitor that the water does not boil away, since the beans consume a lot of it during cooking. After the beans are cooked, put them in a colander and cool.
Let's start preparing vegetables. First, peel the onions and cut them into half rings. If the onion is large, then you can reduce the amount of cutting to a quarter of the rings, or cut into strips.
We marinate the onions in the marinade, which we cook like this: take 1/2 vegetable oil, apple cider vinegar, sugar, salt (a pinch) and filtered water. Stir until sugar and salt dissolve, soak the onion in the marinade.
Take fresh carrots and peel them. Then rub on a coarse grater. It is desirable that the stripes are longer, or you can use a special Korean style vegetable grater.
Mix carrots with garlic passed through a press, grated ginger root, red pepper, coriander, and 1/2 vegetable oil. It is better to stir with your hands so that the carrots give juice and are better saturated with spices.
Now we mix boiled beans, onions with marinade, carrots with spices in a deep bowl. Add soy sauce (classic is better), mix.
Ideally, let the beans with vegetables stand for 1-1.5 hours. And if suddenly you do not eat it right away, then the next day the bean snack will be even tastier. You can serve bean salad with carrots to any side dish, meat or fish.
