A bright spicy carrot salad with dates is a popular Moroccan dish that will win over any connoisseur of healthy and tasty vegetable salads. The combination of the natural sweetness of carrots and dates, refreshing herbal notes, crispy pieces of toasted nuts and seeds, and a savory dressing of olive oil and lemon juice create a colorful and very harmonious salad that tastes great both as a stand-alone snack and as a refreshing addition to fried meat or fish. Prepare ingredients according to the list.
Prepare a dressing. Combine olive oil and lemon juice.
Add salt, red pepper, cumin, and a pinch of ground black pepper. Mix everything well.
Grate the carrots or cut into thin strips.
Add finely chopped green onions and dates.
Pour in the prepared dressing and mix well.
Add about 2/3 of the seeds, finely chopped herbs and nuts to the salad, saving some for garnish.
Mix everything well, taste the salad and add some sugar and spices to taste if necessary. The salad can be served immediately, but if you let it brew, it will only taste better.
