A light, healthy and delicious salad of bulgur, fresh herbs and green peas is a great addition to lunch or dinner.

Ingredients

Bulgur - 200 g

Water (boiling water) - 400 ml

Green peas (frozen) - 300 g

Garlic - 1 clove

Salad onion - 0.5 pcs. (small size)

Lemon - 0.5 pcs. (juice)

Olive oil - 3 tablespoons

Mint leaves - 4-5 sprigs (to taste)

Coriander / cilantro leaves - 3-4 sprigs

Parsley leaves - 3-4 branches

Salt to taste

Ground black pepper - to taste

Sugar - 1 pinch (optional)

Walnut / almond - 50 g (optional)

A colorful bulgur salad with frozen green peas and herbs is a great option for a lean, vegetarian side dish or a light dinner that can be prepared without unnecessary hassle in the kitchen, since the entire process of actively preparing a dish takes no more than 10 minutes.

Supplemented with sweet green peas, fragrant leaves of fresh mint, coriander, parsley and a little red onion and garlic, the salad is light, nutritious and satisfying, colorful and mouth-watering, spicy and pleasantly refreshing. Try it!

For cooking, you will need such components.

Measure 1 cup (200 grams) bulgur into a deep bowl. Add a pinch of salt, 1 tbsp. olive oil and mix everything thoroughly so that the oil envelops all the bulgur grains.

Pour in 2 cups (or 400 ml) of boiling water, using the same cup as the bulgur to measure.

Cover the container with a plate or lid and leave for 20-30 minutes. Then, if necessary, drain the part of the water that has not been absorbed into the cereal, and place the bulgur in a salad bowl. Alternatively, bulgur can be boiled until soft for 10-15 minutes, filtered and cooled.

Combine finely chopped red onion and garlic clove in a separate container. Add 2 tablespoons to the container. lemon juice, mix well, and let the mixture sit while you cook the rest of the ingredients (or at least 5-10 minutes).

Place frozen green peas in boiling water, bring to a boil and cook for 2-3 minutes, until soft.

Then drain the hot water, dip the peas in ice water for a few seconds and strain.

Place chilled bulgur and green peas in a salad bowl. Add a mixture of onions, garlic and lemon juice, and finely chopped mint, coriander and parsley leaves.

Mix everything thoroughly. Add olive oil, salt, ground black pepper, a pinch of sugar and, if necessary, a little more lemon juice to taste.

Bulgur salad with green peas and herbs is ready. If desired, the prepared salad can be sprinkled with toasted and finely chopped walnuts or almonds.
