A salad from the city of Liege in Belgium gives us a certain idea of the cuisine of this country. On the one hand, the Liege salad with green beans turns out to be satisfying, on the other hand, it is quite healthy, so this salad has a lot of fans.
We will prepare all the products according to the list. Green beans are good either fresh or frozen.
First of all, in a saucepan with salted boiling water, boil the potatoes in their skins. Drain the potatoes with water, let the potatoes cool for about 10 minutes, then remove the peel from it and cut into semicircles.
Cut red or purple onions into rings and marinate in a mixture of vinegar and water for 10 minutes.
Cut the green beans into equal-sized pieces. If you have frozen beans, do not defrost them first.
Cook the green beans in boiling salted water for 7 minutes, then drain the water from the beans and immediately fill it with ice water or water with the addition of ice cubes, leave the beans in water for 2-3 minutes, so they will retain their bright green color after boiling.
Put the boiled potatoes and green beans in a bowl.
Cut the bacon into small strips.
Fry the bacon, stirring occasionally, in a dry skillet until crisp.
Add the fried bacon along with the melted fat to the bowl of vegetables.
Salt the marinade with the onion (but do not pour the marinade right away). Add the onion to the salad, season the salad with olive oil.
Let's taste the salad. If the acid is not enough for the salad, you can add a little marinade in which the onions were pickled. Also salt the salad, if needed.
Chop parsley and add to the salad. Mix all the ingredients of the salad.
