To add some variety to the festive New Year's table, try to prepare the popular famous salad "Olivier" in a new interpretation, for example in the form of aspic, but instead of sausage or boiled meat, use sprats in oil. You will see that you will like this option so much that for the next festive table you will definitely cook this fish "Olivier"!
I also like sprats in oil because there are practically no seeds in them, which may well happen with other fish products, for example, salted herring. In general, the ingredients for the dish are practically unchanged: pickled or pickled cucumbers, canned peas, etc. By the way, potatoes and chicken eggs must be boiled and cooled in advance so that all products are at the same temperature. If you cook a dish from hot products, then its shelf life is significantly reduced!
Peel the cooled boiled potato tubers and cut them into small portions, pouring the slices into a deep container.
We also cut the pickled cucumbers and pour the slices into a container along with canned green peas.
Cut the boiled chicken eggs, peeled from the shell and washed in water, in the same cube.
Grind the sprats last, slightly removing excess oil and tails from them. Chop the washed green onions and other greens if desired. Mix all the chopped ingredients. Fill the gelatin with hot water and dissolve for 5 minutes. Pour salt into the water with gelatin and add mayonnaise. Let's mix.
Fill the silicone molds with a salad blank.
Fill them with mayonnaise filling with gelatin, using a tablespoon. Place the mold carefully in the refrigerator until it solidifies. This usually takes about 1-2 hours.
After this time, turn the mold upside down and extract the "Olivier" jellied salad with sprats from it.
Let's decorate it to your liking and serve it to the table. If desired, you can put cranberries on the bottom of each mold, and then - salad.
Enjoy it!
