A salad with bulgur and vegetables can be not only a cold appetizer, it is great as a standalone dish, especially if you are on a weight loss diet, not to mention vegetarians. Also, this recipe can be useful for fasting - all foods are perfectly balanced in it.
To prepare the salad, prepare the foods on the list. Wash the vegetables and dry them with a paper towel.
Rinse the bulgur under running water. Pour it with clean water and cook, with a little salt, 15-17 minutes, until tender. When the water has completely boiled away, cool the cereal, stir, cool.
Chop tomatoes, celery and bell peppers, peeled from seeds and soft membranes.
Add finely chopped green onions and herbs.
Now you need to add the cooled ready-made bulgur to the vegetables.
Season the salad with olive oil, soy sauce, balsamic vinegar, salt and pepper to taste. Stir the salad thoroughly and leave for a few minutes to mix all the juices.
We serve ready-made salad with bulgur and vegetables as an appetizer or as an independent dish.
