Salad with beets, prunes and walnuts is always very tasty and spicy. Usually these ingredients work very well with beets, but I suggest adding chicken to the salad to make it even more satisfying. The salad can be prepared in portions, garnished and served for each guest.
Cut the chicken into small cubes. Chicken can be boiled or baked. I really like using baked chicken. Usually when I bake the whole chicken, I always save the fillet for some kind of salad.
Beets need to be boiled or also baked, peeled and grated.
Fry walnuts in a dry frying pan, allow to cool and peel. Break the nuts into pieces.
Grind prunes into cubes.
In a bowl, combine chicken, beets, prunes and nuts. Pass the garlic through a press. Salt and pepper the salad.
Combine mayonnaise with sour cream and season the salad.
Arrange salad with beets, prunes and walnuts in portioned bowls, garnish with beetroot roses and parsley leaves.
