I am sure that many people will like this salad dressing, because it is prepared from the pulp of eggplant baked in the oven, with the addition of garlic, lemon juice and olive oil … mmm, believe me, it is very tasty.

And it will be especially tasty if you bake eggplants on a grill or over a fire … then this salad will acquire an incredible "smokiness" in taste!

Eggplant Melizanosalata salad is a dish that will not leave you indifferent, like almost all Greek dishes!

We will prepare all the products according to the list.

Wash the eggplants and make frequent punctures on their skin with a fork.

Put the eggplants on a baking sheet and send to the oven preheated to 190 degrees C for 30-35 minutes, until the eggplants are soft on the inside and brown on the outside.

Cut the finished eggplants lengthwise and take out the pulp with a spoon. Put the pulp in a bowl and crush a little with a fork so that the pieces become smaller. You can also puree the pulp in a blender, but we prefer the eggplant pieces to be felt in the salad.
