This grape and cheese salad really consists of just two ingredients: grapes and cheese. True, grapes should ideally be of two types - sweet and sour. Sweet is necessary without pits (color is indifferent), sour can be pitted. The ideal option is sour, also seedless, and most of it goes to marinate cheese, but a few grapes go to salad, to make it more piquant. Let's say 100 g for the marinade and 50 g for the salad. As you can see, my grapes also differ in shade: one is yellow, the other is green. This, in my opinion, is the most beautiful option. Any hard cheese with a not very intense taste and preferably without small holes is suitable.
Don't be confused by the extremely long cooking times. For this salad, cheese is marinated in grape juice, so you won't spend half a day in the kitchen, there will be time to cook for you. Work for the cook - 5 minutes, plus stir the cheese several times during marinating.
Cut the cheese into cubes about the size of a grape.
Squeeze juice from sour grapes (without branches).
Marinate cheese in juice for 8-12 hours. Stir it from time to time.
Mix with sweet grapes separated from the branches. You do not need to pour out the marinade.
Salad with grapes and cheese can be served.
