I really liked the salad with feta and peppers "Bright". Sweet peppers are available almost at any time of the year, so this dish may be in theme for the New Year's table as a snack salad.
Use peppers of different colors: red, yellow, green, orange … Dip pieces of feta in curry, paprika, sesame seeds, dill and / or Provencal herbs, then the salad can rightfully be called "Bright" both in taste and in appearance … It is especially effective to serve it in transparent salad bowls, glasses or just suitable glasses.
Use salad olive oil for dressing.
For Bright, prepare the ingredients as listed.
Peppers must either be fried whole in a pan on the stove, or baked on the grill or in the oven.
Then place the hot peppers in a container for a few minutes. This is done so that later it is easy to remove the top skin. Don't forget to remove the seeds as well.
Cut the flesh of the peppers into long, narrow strips.
For dressing, combine and mix olive oil with balsamic (or lemon juice) and chopped (or crushed) garlic, salt to taste and let it brew.
Divide the spices in which the feta is to be rolled into small bowls or cups. My version is dry dill, curry powder, and white sesame seeds.
Cut the feta into cubes.
Dip a third of the feta in dill, a third in curry, and a third in sesame seeds.
Place the peppers first on the bottom of the salad dish, for example, in transparent glasses of the original shape. Add a sprig of fresh herbs: basil, dill or thyme, pour in the aromatic oil of the dressing. I will clarify that the oil was infused with garlic, and the garlic itself in the salad is no longer necessary.
Lay out the multi-colored feta cubes on top.
Salad "Bright" from baked peppers and colorful feta is ready.
