Tabouleh salad can often be found in restaurants in the Middle East and Mediterranean countries. Its main ingredient is bulgur (wheat grits), complemented by tomatoes and parsley. Vegetable oil, olive oil and lemon juice are used as a dressing. I personally love to cook and serve this simple salad as a side dish for meat and fish dishes, replacing bulgur with couscous, which is its analogue.
Pour 200 grams of couscous into a deep dish, add 0.5 teaspoon of salt, black ground pepper to taste.
Pour 400 ml of boiling water over the couscous (you can take more couscous, most importantly, keep the ratio 1 to 2). Cover with a plate and leave for 5 minutes.
After 5 minutes, the cereal will absorb all the water. Just loosen it with a fork.
Chop the parsley as small as possible.
Cut the tomatoes into small cubes.
Put tomatoes and herbs in a dish in couscous. Season the salad with aromatic vegetable oil and the juice of half a lemon. Season with salt and pepper again to taste.
Mix all the ingredients well and send the salad to the fridge for soaking, about 30 minutes.
Ready-made Tabouleh salad can be served as an independent dish or as a side dish - it goes well with any meat and fish appetizers.
