Arugula and pear salad is made very quickly and easily. Suitable for strict days of fasting.

This salad with arugula and pear is ideal for strict days of fasting, for which a dry diet is prescribed, as it consists only of ingredients that have not been cooked and does not need to be seasoned with oil. Actually, you don't even need to use balsamic, because our main dressing is orange juice. Here it is - needed, both technologically (to protect the pear from darkening in the air), and to taste.
Hard and not very sweet pears are better suited for salad with arugula and pears. Well, in my opinion. The sweet ones contrast too much with the arugula. Instead of almonds, you can take any other nuts. No nuts at all - boring. Plus, they provide a bit of extra calories, which isn't the last thing on strict fast days!
Juice the orange directly into a bowl or plate where you can marinate the pear.
We clean the pear and cut it into slices.
Pickle the pear in orange juice as long as time permits. If possible, stir it several times.
We clean and cut the carrots into strips.
We collect the salad: the bottom layer is arugula, and pears, carrots and almond petals are scattered on top of it.
You can also pour the balsamic over.
But you can do without balsamic, well, that's not important in this recipe!

This salad can be made in minutes, but it tastes better if you marinate the pear in orange juice for several hours.
