Olivier salad is an unspoken symbol of the New Year and Christmas feast! I suggest making "Olivier" with pork tongue. But there is one nuance - I don't like "Olivier" with only one language, the taste is kind of dim, I advise this to add sausage to it. Which sausage to use is up to you, the main thing is that it is tasty. I like to use smoked sausages, then "Olivier" tastes better than with a doctor's or milk sausage, more aromatic. And when Olivier has both the tongue and the sausage (well, besides other ingredients, of course), the salad turns out to be the most successful, very tasty and truly festive!
Boil in advance, according to the standard scheme, potatoes in uniforms, carrots, eggs, pork tongue. Then cool the vegetables and tongue and peel the food (eggs from the shell, potatoes and carrots from the skin, and the tongue from rough skin). Also prepare canned peas, sausage, onions, pickles, mayonnaise, salt and pepper.
Cut and combine potatoes, carrots (all small cubes) and onions (very small cubes).
Add peas (completely drain the liquid from the jar), eggs and cucumbers (all in small cubes).
Then add chopped sausages or any sausage to taste and pork tongue (all in small cubes).
Season the salad with mayonnaise with a fat content of at least 67% (not very tasty with a light one), salt and pepper to taste.
Stir the ingredients with the mayonnaise and put the Olivier in the refrigerator for at least 1 hour, so that the salad is steeped.
Serve "Olivier" with tongue on the festive table on a common plate, lay out the salad in a slide and decorate to taste.
