I saw the idea of a chicken salad with apple, cheese, pickled onions and pomegranate seeds on the blog of sago_cuisine and, as a lover of chicken and fruit combinations, I was really hooked! I prepared a variation, I am very pleased, the household also approved, so I share.
Chicken is best fried or baked, such as breast or meat from other parts of the chicken. Apples are preferably strong, while juicy and not sweet, but sweet and sour. Mayonnaise as a dressing is very relevant here, so I have not experimented with other dressing options, but in general is a matter of taste.
Prepare the ingredients according to the list:
Marinate the onion first. Usually I cook quick pickled onions in the simplest way: chop a large head of onion, squeeze, add salt, sugar and apple or other fruit vinegar and the onion is ready within 10-15 minutes.
This time, I additionally scalded the chopped onions, drained the water, added more fruit vinegar and added olive oil to the usual composition.
Assemble a flaky salad in which all layers of ingredients will be repeated twice.
Cut the chicken into strips.
Place half of the chicken in a salad bowl (flat dish, deep bowl, or portioned).
Brush with mayonnaise and add half the onion. Flatten.
Cut apples with or without peels, if desired, also cut into strips, sprinkle the slices with lemon juice so that they do not darken too much.
Lay half of the apples in the next layer.
