Eggplant and Tomato Salad - A simple salad with a bold vegetable flavor. Suitable for everyday table. It goes well with any side dishes, with meat. Cooking does not require time and effort. The result was appreciated by all my household. Try to cook you too.
Prepare all required ingredients.
Wash the eggplant and cut into slices ~ 6-8 mm thick, season with plenty of salt and leave for 10-15 minutes to leave the bitterness. Rinse off the salt, dry the sliced eggplant slices with a napkin and place them in the gas grill pan. Having previously greased the grill with oil so that the eggplants do not stick and can be easily removed after cooking. Cover the skillet and cook over medium heat for 15 minutes. This time will be enough for the eggplants to bake and become soft. You can also fry the eggplant in a regular frying pan, pouring in a little sunflower oil. You can also bake in the oven - this will not change the taste of the salad.
Wash tomatoes and cut into small wedges. It is better to use a dense, meaty tomato variety.
Wash the sweet pepper, remove the stalk and seeds. Cut into thin strips. Combine with tomatoes.
Remove the eggplants and gently move your hand to remove the skin from each circle Cut each circle into 3-4 pieces. Place with other vegetables. Add chopped herbs, salt, sesame seeds. Stir the whole mass gently and season with fragrant sunflower oil.
