Shrimp Omelet Vegetable Salad is a simple yet delicious salad for any occasion in life.
We all love and respect the "heap" of vegetables with oil dressing, especially in the summer. But even in winter there is an urgent need to consume fresh vegetables.
I suggest adding a delicate shrimp omelet to the salad. It turns out to be a very interesting and tasty combination. You can also throw a few whole shrimps into the salad, it will be smart!
The savory dressing complements the vegetables and seafood perfectly.

I make a salad in portions, for one person - for me, it's more convenient!
Boil the shrimp for a couple of minutes in advance. Wash and dry the vegetables.
Cut the lettuce, tomato and cucumber into small pieces. Arrange on plates.
Break eggs into a bowl, season with salt and pepper.
Peel the shrimps and chop finely. Add to eggs.
In a hot frying pan with a little oil, fry a thin omelet on both sides, I got two pieces.
