My family has been loving this salad for a long time and I am often asked when I will cook it next. Since chicken liver is a fairly common product and very inexpensive, I often cook this salad. It is very simple to prepare, hearty and tasty, and if you serve the dressing separately, then it will also retain its attractive appearance.
To prepare the Obzhorka Salad with liver, take the necessary products. The liver must be washed under running water, the films must be cut off. Wash, dry, peel vegetables.
Cut the onion into thin half rings, finely chop the carrots or cut into a grater for Korean carrots. Fry in a little vegetable oil until soft.
Add chopped mushrooms, cook for 3-4 minutes.
Then add chopped wild garlic (if there is no wild garlic, add a clove of garlic). Cook for another 1-2 minutes, season with salt and pepper to taste.
While the vegetables are being prepared, boil the chicken liver in slightly salted water. Cooking time - maximum 7-8 minutes, otherwise the liver will be very bitter.
Put the fried and cooled vegetables, chopped boiled liver into a deep bowl.
Add fresh cucumber, cut into a block.
Gently mix the salad, season with salt and pepper to taste. For dressing, mix sour cream and mayonnaise, also salt and pepper.
If you serve Obzhorka salad with liver immediately after cooking, you can season and serve. And if after a while, then you can serve the dressing separately and dress the salad right before serving.
