Pork liver salad with potatoes, eggs, pickles and onions turns out to be hearty and will decorate any festive table. As you can see, all the products are available, no overseas delicacies, and yet the liver salad is very popular because it turns out to be very tasty. Products can be laid out in layers or mixed - the second option seems to me more convenient and correct, because then the salad turns out to be much juicier.
To make pork liver salad, take pork liver, potatoes, eggs, onions, parsley, pickles and mayonnaise for dressing.
Boil pork liver in salted water and let cool. Also boil jacket potatoes and chicken eggs, peel these products after cooling. Dice the pork liver and combine in a large salad bowl with small diced onions, which can be pre-marinated or left raw (optional).
Add the diced potatoes and chopped parsley to the salad bowl.
In the salad bowl, also add the pickled cucumbers, cut into small cubes, and the chopped eggs.
Season the ingredients with high fat mayonnaise. If your cucumbers are not very salty, then you can additionally add salt to the salad, I did not have to do this.
