A simple salad with pickled cucumber. The dish is very similar to Vinaigrette, suitable for vegans and vegetarians.

This salad was "born" because of my laziness. I was going to somehow make a vinaigrette, but it turned out that not all the products I have … I really wanted the vinaigrette, so it was decided to cook from what was available. And believe me, it turned out very tasty!
If you have a double boiler, it doesn't take long to cook. For a long time I "boil" all vegetables for salads in it. I just clean it up, cut it right and - voila - you're done! It is very inconvenient to boil potatoes, and then chop them when they stick to the knife … But, you yourself know everything:)
I advise you to fill the salad with unrefined sunflower oil. It is this that will give the salad taste and aroma!
For cooking, we need: pickled cucumbers, carrots, green onions, dill, potatoes, beets, unrefined sunflower oil.
Peel all vegetables (except for cucumber and herbs), cut into cubes. Stir and place in a steamer bowl. We set the cooking time for vegetables. I have it 15 minutes.
When the vegetables are cooked, place them in a bowl. We will also send diced cucumbers there. Finely chop the onion and herbs. Season with fragrant oil.
We mix everything. Salad ready. You can eat it right away, or you can chill it. I do not salt the salad, because there are enough pickles.
