The "Hedgehog" salad with Korean carrots attracted me primarily with its appearance. By the way, the ingredients for the "filling" can be different every time, the main thing is that they are harmoniously combined with each other. In this recipe, the combination of products is downright classic: cheese, chicken, mushrooms, eggs. Korean-style carrots add their zest and simply give the salad an original and appetizing look.

When I was preparing the "Hedgehog" salad with Korean carrots for children, I used only sour cream, and made Korean carrots on my own without garlic and pepper, with apple cider vinegar. Another time I used mayonnaise and it was also very tasty.

Get everything you need ready. And although there are many ingredients, it will be difficult to forget something.

Boil the chicken fillet (or any other part of the chicken carcass) in salted water with spices. Then cool and cut the meat into small cubes. You can also take it apart by hand. Place on a hedgehog-shaped torso dish, make a sour cream layer.

Rinse oyster mushrooms, chop finely. Peel and finely chop the onions. The finer the slicing, the softer the structure of the salad itself. Fry the mushrooms with onions in vegetable oil for 5-6 minutes, then make the next layer on the chicken.

You can take any hard cheese - whichever you like best. I take it with a more salty taste - so the taste of the salad itself turns out brighter, it feels like it contains cheese. Grate it on a fine grater and lay out the next layer, lightly coat with sour cream.

Chicken eggs need to be grated on a fine grater and also put on a layer of cheese. Make a sour cream mesh on top, carefully distribute it, giving the salad its final shape.

Long strips of carrots should be cut into shorter pieces and placed on top of the cheese layer, leaving some of the salad "free" - this will be the muzzle.

Finish off your salad with fresh herbs. The eyes and nose can be made with peppercorns or olives.

Let the salad sit for an hour and a half in a cool place before serving. The Hedgehog salad with Korean carrots is ready. Enjoy your meal!
