A quick-to-prepare green vegetable salad with crispy radishes and cucumbers is good as an appetizer and as a side dish for meat dishes.

Quick salads with radishes in the lead role are very helpful for the hostesses, not only saving time, but also the opportunity to fantasize, composing new tastes, trying new combinations.
I suggest trying a green salad with radishes, arugula and cucumber, dressed with a simple lemon dressing. A minimum of cooking time will be spent, but there will be a lot of pleasure, benefit and crunch!
Before starting the preparation of the salad, I wash the vegetables and herbs and let the water drain.
If the radish has young tops, then you can put it in a salad.
Cut the radish and cucumber into thin slices; for convenience, you can use a grater, such as a mandolin.
To enhance their taste, pine nuts can be lightly browned in a dry skillet for a few minutes, stirring constantly.
Let's make a simple lemon dressing. To do this, mix lemon juice, olive oil, white balsamic vinegar, salt and black pepper in a jar (or in another suitable container). Close the jar and shake it well so that everything mixes and the salt dissolves. We take salt to taste, remembering that the dressing should be of a rich taste.
The ingredients of the salad are ready, you can compose. Put arugula on a serving dish. It can be coarsely chopped, but it is better to pick it with your hands into a plate. If we use radish tops, we also add it along with arugula.
Put the slices of radish and cucumber, cut into small cubes, and pine nuts on the salad greens.
Sprinkle the salad generously with finely chopped dill and parsley and pour over the dressing.
The green salad with radishes is ready, mix it slightly with two forks so that the dressing is evenly distributed.
You can prepare this salad and dressing several hours before serving and store it in the refrigerator (separately). But it is better to water the salad with dressing just before serving.
