This daikon salad with carrots and apples will appeal to all lovers of healthy and low-calorie food. After all, it contains only fresh crispy vegetables and fruits. Moreover, this version of the salad is prepared in a salty form, although you can use honey for dressing, add a handful of raisins or other dried fruits, and as a result you get a sweet salad that is perfect for breakfast or as a light dinner, as well as the salty version. In the sweet version, purple onions should be excluded from the recipe.
For cooking we need daikon, carrots, apple, unrefined sunflower oil, mustard beans, salt, ground black pepper, lemon juice.
So, before cooking, rinse all the vegetables and apple with cool water, pat dry with a paper towel and remove the peel. Buy daikon fresh, with dense pulp. If the vegetable is sluggish, the salad will taste differently.
Use a Korean carrot grater, sharp knife, or regular coarse grater to chop. Choose the method of grinding at your discretion. It's just that the thinner the ingredients are cut, the juicier the salad will be. I chose a loin grater for grinding the daikon.
Chop the carrot root in the same way. Add it to the daikon salad bowl.
Cut the peeled onion into thin half rings and add to the rest of the ingredients.
Chop the peeled apple on a grater.
Sprinkle it with lemon juice immediately.
Now let's prepare the dressing. In a bowl, combine mustard and sunflower oil.
