Obzhorka salad has this name because of its satiety. The main component of the salad is meat - mainly beef, but chicken can also be used. In the proposed recipe, smoked chicken breast is used, its pronounced taste makes the salad spicy and tastier. An obligatory element of the salad is the carrot and onion sautéing. Vegetables sautéed in oil also make the salad more filling. For juiciness, pickled cucumbers are added, which fill the dish with sour notes. Before serving, "Roast" is covered with crackers, they are allowed to be bought in the store or prepared by yourself. Using spices, you can create aromatic spicy croutons.
Prepare the products for the Obzhorka salad with smoked chicken and crackers according to the list. Wash vegetables thoroughly, wipe with a towel.
Separate the head of the onion from the husk, cut into medium-sized cubes.
Remove the top layer from the carrots, grate with large holes.
Place a frying pan on the burner, pour in the oil, after heating, load the onion shredder. Fry the onion separately for 1 minute, then add the carrot strips to it. Saute vegetables in oil until soft for the next 5 minutes over medium heat.
Cut the loaf slices into squares of the same size, place them in a dry preheated pan. Fry the loaf, stirring occasionally, for about 3 minutes. Then remove from the stove, sprinkle with salt, dry garlic and your favorite spices, mix, leave them in a pan for 10 minutes. During this time, the loaf will dry out, resulting in spicy croutons.
Squeeze the pickled cucumbers from the marinade, cut into small cubes. Drain the juice that will stand out when cutting.
Load the sautéed vegetables, cucumber and half of the croutons into one container, add smoked chicken, pre-cut into cubes, to them.
Season the mixture with mayonnaise, salt and ground pepper, mix thoroughly.
Serve the salad immediately after cooking without pre-impregnation. Sprinkle the dish with fresh chopped parsley and a second serving of croutons.
