For this recipe, you need beef pulp without fat and veins, ideally buy a tenderloin, but it's not cheap.

So, let's prepare all the necessary products for the classic salad "Olivier" with meat (with beef).

First you need to boil the beef. Pour in cold water, bring to a boil, remove the foam, lower the bay leaf, peppercorns, salt, cover and cook over moderate heat for about 1 hour.
