There are some salads, about the classic composition of which there is debate, on their basis new variations appear … The Nicoise salad also belongs to them. I would like to share a variant of its preparation with grilled tuna and green beans. If your soul requires olives or olives, then add.

Green beans can be either fresh or frozen. Take tomatoes of any type and size. I have arugula as salad herbs, but others, as well as leafy salads and salad mixes, are suitable.

The dressing will be prepared on the basis of olive oil with the addition of lemon juice, mustard, Worcester sauce, if available, and honey, if you are not afraid to experiment. Choose the mustard for dressing according to your taste: simple Russian, medium-spicy, Dijon or granular, their combinations are also suitable.

For the Nicoise Grilled Tuna Salad, prepare the ingredients as listed.

Boil the eggs hard-boiled or, if you trust their quality, to the "bag" stage with a soft but well-set yolk. Chill the surface of the eggs in cold water so that the shells are easier to clean, but they remain warm.

Brush fillets of fresh or defrosted tuna with olive oil and lightly salt. Then fry on both sides in a grill pan (or other pan) so that the center remains pink. To achieve this, make sure that the pink strip in the middle of the tuna fillet is no less than a third of its thickness.

Place the green beans in boiling water for three minutes, then rinse with cold water to maintain a bright color and, if desired, a light crunch.

For salad dressing combine olive oil, mustard, lemon juice, Worcester sauce and, for new flavors, honey.

It is especially convenient to combine everything in a small jar, for example, from baby food such as mashed potatoes or the like, in which the ingredients can be shaken until smooth.

Collect the salad in batches. Place arugula or any lettuce salad on a dish or salad bowl.

Then add the green beans and tomatoes. Add cherry or cocktail tomatoes whole or cut into halves, and large tomatoes should be cut into slices or pieces.

Cut the tuna fillet into slices, eggs into circles or 4-8 pieces.

After all the ingredients are on the plate, pour the dressing over the Nicoise salad. Pour the main part of the dressing over the tuna and a little over herbs and vegetables. Serve immediately.
