Lenten salad "Olivier" with shrimps tastes very similar to the usual one. Suitable for non-strict fasting days when fish is allowed.

Ingredients

Boiled potatoes - 3 pcs.

Boiled carrots - 1 pc.

Fresh cucumber - 100 g

Pickled cucumber - 40 g

Avocado - 1 pc.

Shrimps - 100 g

Canned peas - 2 tbsp

Cucumber pickle - 2 tbsp

Canned tuna - 2 tablespoons

Parsley, green onions, salt, pepper, vegetable oil - to taste

Water - for cooking

Here I have a very cool idea of how to make a lean Olivier with shrimps! Well, I think everything is clear with shrimps - they are, as it were, instead of sausages. In addition to them, there are two more non-fasting ingredients in a normal Olivier: eggs and mayonnaise (which also contains an egg). Well, instead of all the options for eggs, my lean Olivier will have an avocado. Sorry, very overripe and ugly looking. Optically it is "fu-fu-fu", but in taste and consistency - what the doctor ordered! Because a heavily overripe avocado has almost no avocado flavor of its own, it is absolutely neutral and makes a good creamy sauce, which, in fact, I will replace mayonnaise with. In addition to the avocado, there will be canned tuna in the thick sauce. But even tuna will not lead the general taste and smell of this lean "Olivier" into a pronounced fishy one, it will still remain olivier!

Potatoes and carrots should already be cooked and cooled at the beginning of the salad preparation.

Boil frozen shrimp in boiling water for 3 minutes.

Cool the shrimp with cold water, clean.

Cut the avocado into two halves, peel, remove the bone. We cut one half into pieces - it will represent a boiled egg.

Purée the other half of the avocado with 2 tbsp. cucumber pickle, 2 tbsp. canned tuna, parsley, salt, pepper and, if the tuna is not in oil, but you want fatter, with a teaspoon of vegetable oil. But it is not necessary, for me you, for example, see without oil. The sauce will churn anyway.

Peel the potatoes and carrots. We cut everything that still needs to be cut into a salad.

We combine all the ingredients, add the sauce, mix.

If you want to be showy, lean "Olivier" with shrimps can be decorated with a parsley leaf, whole shrimps and finely chopped green onions.

Since we have green avocado mayonnaise with tuna, the whole salad turned out to be greenish too, and too soft avocado is no longer visible, so everything is fine!
