A salad that can be eaten not only by a fasting and eating right woman, but also by a hungry man! Quinoa groats rich in protein, vitamins and microelements, combined with hearty beans, pickled crispy onions and juicy, sweet cherry tomatoes - all this makes the salad not just tasty, but VERY tasty, and even nutritious!
We will prepare products for making salad from quinoa, beans and cherry tomatoes according to the list.
Let's start our salad by boiling quinoa. It's easy to cook. The approximate proportion is 1 part quinoa and 2 parts water. For 40 g of quinoa, I took 100 ml of water.
Cooking like this: first, pour water into a saucepan. Let it boil, add some salt and grits. As soon as the water boils again, remove the white foam formed on its surface, reduce the heat to low and cook the quinoa for about 15 minutes, until all the water has boiled away and the cereal becomes soft and increases in volume.
Remove the finished quinoa from the fire and let it cool.
Meanwhile, slice the cherry tomatoes in half lengthwise.
Cut the onion into thinner half rings and marinate for 5-10 minutes in a mixture of 1 tbsp. lemon juice and 1 tsp. water.
Drain the liquid with the beans and rinse it under running water, let the water drain, discarding the beans in a colander.
Put the cooled quinoa, tomatoes, beans and onions (after draining the marinade from it) into a bowl.
Add soy sauce.
Pour olive oil over the salad and mix everything well.
Serve the salad of quinoa, beans and cherry tomatoes in portions.
