A wide variety of dishes can be prepared from chicken breast fillets, including salads for every taste. These can be both hearty holiday salads, seasoned with mayonnaise, and more dietary salads with a dressing of vegetable oils, lemon juice, balsamic, wine or apple cider vinegar. I offer a salad recipe with chicken meat, vegetables, lots of greens and homemade crackers, which can replace a light lunch or dinner. Chicken breast fillet must first be boiled or baked in foil.
Cut the baked or boiled chicken breast into thin slices.
Rinse the lettuce leaves under cold water and dry. I used arugula and chard leaves.
Wash the cherry tomatoes and cut them in half.
Peel the onion and cut into thin rings.
Combine olive oil, lemon juice and dried basil. Mix thoroughly.
Transfer the lettuce leaves to a dish or salad bowl.
Top with tomatoes, onions, chicken fillet and croutons.
Drizzle with salad dressing, sprinkle with black pepper and serve.
A delicious and healthy salad is ready.
