I bring to your attention a rather unusual dish - a salad of melon and cucumber. I am sure he will pleasantly tickle the taste buds of lovers of unusual combinations of products and other similar culinary perversions and delights.

Melon salads - they are more and more sweet, fruity, right? Melon and cucumber salad is seasoned with salt, no sugar, and it tastes like no dessert. Sometimes tomatoes are also used in this dish, but the base is still a melon and a cucumber.

Melon and cucumber salad is simply great on a hot sunny day when you don't feel like anything heavy. This is a lean and vegan salad, no animal products are used in it.

There is no need to be afraid of a long cooking time - there a cucumber is just pickled for an hour, and then all the ingredients together - about fifteen minutes. And there is not much real work.

There is a small round melon for two servings if you cut it into balls, and half if you use some more waste-free method of cutting. I also need one greenhouse cucumber, 3 tbsp. olive oil, 1 tablespoon lemon juice, 1-2 pinches of salt, a little ground pepper and some fresh herbs. I have tarragon, burnet and mint. I find it difficult to give a calculation of products per serving purely due to the fact that it is difficult to prepare a vinaigrette sauce in such a small amount.

Peel the cucumber, cut into halves lengthwise and remove the seeds.

Salt the cucumber cut into cubes (or into any pieces you like) and leave it to drip for about an hour. Along the way, you can interfere with it a couple of times. At the end of the marinating, drain the liquid.

Finely chop the herbs.

Cooking a vinaigrette of lemon juice and olive oil with herbs and ground pepper (see the link for making the sauce above).

Slice the melon.

Combine the pickled cucumber with melon, pour over the vinaigrette sauce, stir and let everything marinate together for at least 15 minutes. It is possible up to half an hour, more is irrational. Here you can add salt to taste.

You can also sprinkle with fresh tarragon leaves for decoration.
